  • 1/2 cup celery, diced
  • 1 tsp thyme, dried
  • 1 tsp parsley, dried
  • 1/4 cup ketchup
  • 1/4 cup maple syrup
  • 1 tbsp soy sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked lentils, breadcrumbs, chopped onions, garlic powder, diced carrots, diced celery, dried thyme, and dried parsley.
  3. In a small bowl, mix together the ketchup, maple syrup, and soy sauce.
  4. Pour the ketchup mixture over the lentil mixture and stir until well combined.
  5. Press the mixture into a loaf pan lined with parchment paper.
  6. Bake for 40-45 minutes, or until the loaf is firm and golden brown.
  7. Allow the lentil loaf to cool for 10 minutes in the pan, then transfer to a serving plate before slicing.
  8. Serve the sliced lentil loaf with additional tomato glaze if desired.
