Sayadieh is a traditional Lebanese dish featuring fragrant spiced rice topped with tender fish and caramelized onions. Ingredients
- 1 cup basmati rice
- 1 lb white fish fillets, such as cod or haddock
- 1/4 cup vegetable oil
- 2 large onions, sliced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/4 tsp cinnamon
- 4 cups water
- salt and pepper, to taste
Instructions
- Rinse the basmati rice under cold water until clear. Set aside.
- Season the fish fillets with salt, pepper, cumin, paprika, and turmeric.
- In a large skillet, heat the vegetable oil over medium heat. Add the sliced onions and cook until caramelized, about 10-15 minutes.
- Remove the onions from the skillet and set aside.
- In the same skillet, add more oil if needed and sear the seasoned fish fillets until golden brown on both sides, about 3-4 minutes per side. Remove from the skillet and set aside.
- In a separate pot, bring the 4 cups of water to a boil. Add the rinsed rice, cinnamon, salt, and pepper to the pot.
- Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked through.
- Fluff the rice with a fork and transfer it to a serving platter.
- Arrange the caramelized onions on top of the rice, then place the seared fish fillets on top.
