Sheer Khurma (شیر خرما)

Sheer Khurma, often referred to as ‘Seviyan,’ is a cherished Persian dessert traditionally prepared during festive occasions like Eid. This indulgent vermicelli pudding is rich with the aromatic flavors of cardamom, saffron, and rose water. The dish offers a delightful combination of creamy texture and a crunchy contrast from fried almonds, pistachios, and cashews. Sheer Khurma is a dessert that embodies joy and community, making it a wonderful conclusion to any celebratory meal.

Ingredients

  • 1 cup vermicelli
  • 4 cups milk
  • 1/2 cup sugar
  • 1/4 cup ghee
  • 1/4 cup mixed nuts, chopped
  • 1/4 tsp cardamom powder
  • a few strands saffron
  • 1 tbsp rose water

Instructions

  1. In a pan, heat the ghee over medium heat and fry the vermicelli until golden brown, stirring frequently.
  2. Add the milk, sugar, and cardamom powder. Bring to a simmer and cook until the vermicelli is tender, about 15-20 minutes.
  3. Stir in the saffron and rose water, mixing well. Cook for an additional 5 minutes to let the flavors meld.
  4. In a separate pan, fry the mixed nuts in a little ghee until golden brown, being careful not to burn them.
  5. Transfer the cooked sheer khurma to a serving dish and garnish with the fried nuts before serving.
