Ingredients

  • 4 medium chicken breasts, boneless and skinless
  • 1/2 cup feta cheese, crumbled
  • 2 cups fresh spinach, chopped
  • 1/4 cup balsamic glaze
  • 1 Tbsp olive oil
  • salt and pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast, being careful not to cut through the other side.
  3. In a bowl, mix the feta cheese and chopped spinach until well combined. Stuff this mixture into the pockets of the chicken breasts.
  4. Season the outside of the chicken with salt and pepper.
  5. Heat the olive oil in an oven-safe skillet over medium-high heat. Once hot, add the chicken breasts.
  6. Sear each side of the chicken for 3 to 4 minutes until browned.
  7. Transfer the skillet to the preheated oven and bake for 15 to 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Remove the chicken from the oven and let it rest for a few minutes.
  9. Drizzle the balsamic glaze over the stuffed chicken before serving.
  10. Serve with a side of your choice for a complete meal.
