Crispy on the outside and tender inside, these spring onion and Parmesan fritters are enhanced with fresh dill flavor.
Ingredients
- 1 cup spring onions, finely chopped
- 1/2 cup grated Parmesan cheese
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- 2 tablespoons fresh dill, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a large bowl, mix together the chopped spring onions, grated Parmesan, flour, beaten eggs, dill, salt, and pepper until well combined.
- Heat the olive oil in a 9-inch skillet over medium heat.
- Scoop 2 tablespoons of the mixture for each fritter and place into the skillet, flattening slightly with a spatula.
- Cook the fritters for 3-4 minutes on each side, or until golden brown and crisp.
- Transfer to a plate lined with paper towels to drain excess oil.
- Repeat with the remaining mixture, adding more oil as needed.
- Serve warm with a garnish of extra dill if desired.
