Ingredients

  • 1 cup spring onions, finely chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • 2 tablespoons fresh dill, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, mix together the chopped spring onions, grated Parmesan, flour, beaten eggs, dill, salt, and pepper until well combined.
  2. Heat the olive oil in a 9-inch skillet over medium heat.
  3. Scoop 2 tablespoons of the mixture for each fritter and place into the skillet, flattening slightly with a spatula.
  4. Cook the fritters for 3-4 minutes on each side, or until golden brown and crisp.
  5. Transfer to a plate lined with paper towels to drain excess oil.
  6. Repeat with the remaining mixture, adding more oil as needed.
  7. Serve warm with a garnish of extra dill if desired.
