  • 2 cloves garlic, minced
  • 4 cups fresh peas
  • 4 cups vegetable broth
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon lemon zest

Instructions

  1. Heat the olive oil in a 6-quart saucepan over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute, until fragrant.
  4. Add the fresh peas and vegetable broth to the pan.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes, until peas are tender.
  6. Remove the pan from heat and add the fresh mint, parsley, and lemon zest.
  7. Using an immersion blender, puree the soup until smooth.
  8. Season to taste with salt and pepper.
