Ingredients
- 8 oz salted cod, soaked and flaked
- 1 medium onion, finely chopped
- 2 whole scallions, chopped
- 1 whole hot pepper, finely chopped
- 1 tsp thyme, dried
- 1 tsp black pepper
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 cup water
- 1 cup vegetable oil, for frying
Instructions
- Soak the salted cod in cold water for at least 2 hours, changing the water several times to remove excess salt. Drain and flake the cod into small pieces.
- In a large bowl, combine the flaked salted cod, finely chopped onion, chopped scallions, finely chopped hot pepper, dried thyme, and black pepper.
- In a separate bowl, mix the all-purpose flour and baking powder. Gradually add water, whisking until a smooth batter forms.
- Pour the batter over the saltfish mixture and stir gently until well combined.
- In a deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- Carefully drop spoonfuls of the batter into the hot oil and fry until the fritters are golden brown on both sides, about 3-4 minutes per side.
- Remove the fritters from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve hot.
