Ingredients

  • 4 medium zucchinis

  • 1 tsp coriander, ground
  • 1/2 tsp cinnamon, ground
  • 1/4 cup parsley, chopped
  • 1 juiced lemon
  • 2 cups chicken broth
  • 1/4 cup olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Wash and trim the zucchinis, then cut off the tops. Using a coring tool, scoop out the insides, leaving a 1/4-inch shell.
  3. In a large bowl, mix the uncooked rice, ground beef, chopped onion, minced garlic, cumin, coriander, cinnamon, parsley, lemon juice, and a pinch of salt and pepper.
  4. Carefully stuff each zucchini with the rice and meat mixture, ensuring not to overfill. Place the stuffed zucchinis in a baking dish.
  5. Pour the chicken broth and olive oil evenly over the stuffed zucchinis in the dish.
  6. Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes.
  7. Remove the foil and continue baking for an additional 15 minutes, or until the zucchinis are tender and the tops are slightly browned.
  8. Once done, remove the stuffed zucchinis from the oven and let them cool slightly before serving. Garnish with additional fresh parsley if desired.
