Juicy and flavorful, these Teriyaki Chicken Skewers are grilled to perfection with a sweet and savory glaze.

Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup mirin
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 12 wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, mix soy sauce, brown sugar, mirin, honey, rice vinegar, minced garlic, and grated ginger.
  2. Reserve 1/4 cup of the marinade for glazing.
  3. Add chicken cubes to the marinade, ensure they are coated well, cover, and refrigerate for 1 hour.
  4. Remove chicken from refrigerator and thread onto the soaked skewers.
  5. Preheat grill to medium-high heat.
  6. In a saucepan, mix cornstarch and water, then add reserved marinade. Bring to boil until thickened.
  7. Grill skewers for 10-12 minutes, turning occasionally, until cooked through and charred.
  8. Brush with the thickened glaze during the last 2 minutes of grilling.
  9. Serve hot with your choice of sides.
