Ingredients
- 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup mirin
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon cornstarch
- 1 tablespoon water
- 12 wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, mix soy sauce, brown sugar, mirin, honey, rice vinegar, minced garlic, and grated ginger.
- Reserve 1/4 cup of the marinade for glazing.
- Add chicken cubes to the marinade, ensure they are coated well, cover, and refrigerate for 1 hour.
- Remove chicken from refrigerator and thread onto the soaked skewers.
- Preheat grill to medium-high heat.
- In a saucepan, mix cornstarch and water, then add reserved marinade. Bring to boil until thickened.
- Grill skewers for 10-12 minutes, turning occasionally, until cooked through and charred.
- Brush with the thickened glaze during the last 2 minutes of grilling.
- Serve hot with your choice of sides.
