Vegan Mediterranean Stuffed Grape Leaves are a beloved dish filled with rice, pine nuts, and herbs, wrapped in tender grape leaves. This recipe offers a taste of the Mediterranean with its savory and appetizing flavors. Enjoyed as an appetizer or a main course, these stuffed grape leaves provide a delightful plant-based meal. The preparation involves cooking the rice filling, wrapping it in grape leaves, and baking or steaming until perfectly done.

Ingredients

  • 1 cup rice
  • 1/4 cup pine nuts
  • 2 Tbsp fresh mint, chopped
  • 1 oz grape leaves, drained

Instructions

  1. Cook the rice according to package instructions. Once cooked, mix the rice with pine nuts and chopped mint.
  2. Lay a grape leaf flat on a work surface, shiny side down. Place a spoonful of the rice mixture near the stem end of the leaf.
  3. Fold the sides of the leaf over the filling, then roll from the stem end towards the tip, forming a tight roll.
  4. Repeat with the remaining grape leaves and filling until all are used.
  5. Arrange the stuffed grape leaves in a baking dish, seam side down, in a single layer. Add enough water to just cover the bottom of the dish.
  6. Cover the dish with foil and bake in a preheated oven at 350°F (175°C) for 30-35 minutes, or until heated through.
