Ingredients

  • 1 whole bell pepper, thinly sliced
  • 1 whole zucchini, thinly sliced
  • 1 whole onion, thinly sliced
  • 1 cup cheddar cheese, shredded
  • 1 tbsp olive oil
  • 4 whole large flour tortillas

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add thinly sliced bell pepper, zucchini, and onion. Sauté for about 5 minutes until the vegetables are tender.
  3. Remove the vegetables from the skillet and place them aside.
  4. Place one tortilla in the skillet, sprinkle a quarter of the cheese over it.
  5. Add a portion of the sautéed vegetables on top of the cheese.
  6. Cover with another tortilla.
  7. Cook until the bottom tortilla is golden brown, then use a spatula to carefully flip the quesadilla.
  8. Cook until the second side is golden brown.
  9. Remove the quesadilla from the skillet, and repeat the process with the remaining tortillas and filling.
  10. Serve the quesadillas hot, cut into wedges.
