  • 2 cans sardines in oil, drained, flaked

  • 2 whole eggs, beaten
  • 2 Tbsp oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated

Instructions

  1. Heat 1 tablespoon of oil in a large skillet over medium heat.
  2. Add garlic and ginger, cooking until fragrant, about 1 minute.
  3. Stir in mixed vegetables, cooking until tender, about 5 minutes.
  4. Push vegetables to the side of the skillet and add remaining oil.
  5. Pour in beaten eggs, scrambling until fully cooked, about 2 minutes.
  6. Add cooked rice, flaked sardines, and soy sauce to the skillet. Stir well to combine and heat thoroughly.
  7. Transfer to a serving dish.
