  • 1 lb shrimp, peeled and deveined
  • 6 slices bacon, chopped
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a saucepan, bring the water and salt to a boil. Stir in the grits, reduce the heat, cover, and simmer for 20-25 min, stirring occasionally until thick and creamy.
  2. Add the cheese and butter to the grits, stirring until melted. Keep warm.
  3. In a skillet, cook the chopped bacon over medium heat until crisp. Remove the bacon and drain on paper towels, leaving the drippings in the skillet.

  5. Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-4 min. Remove the shrimp from the skillet and set aside.
  6. Pour the chicken broth and lemon juice into the skillet. Bring to a boil, then reduce the heat and simmer for 5 min.
  7. Return the shrimp to the skillet and cook until heated through, about 2 min. Serve the shrimp over the warm grits, topped with the cooked bacon and fresh parsley.
