Ingredients
- 1 whole chicken, cut into pieces
- 6 slices bacon, chopped
- 1 bottle red wine
- 1 cup chicken broth
- 1/2 cup all-purpose flour
- 1 pound mushrooms, sliced
- 2 medium onions, chopped
- 4 cloves garlic, minced
- 2 sprigs fresh thyme
- 2 Tbsp butter
Instructions
- In a large Dutch oven, cook the bacon over medium heat until crispy. Remove and set aside.
- Season the chicken pieces with salt and pepper. Brown them in the bacon fat until golden on all sides. Remove and set aside.
- Add the onions, mushrooms, and garlic to the pot. Cook until softened, about 5 minutes.
- Sprinkle flour over the vegetables and cook for 1-2 minutes. Pour in the red wine and chicken broth, stirring to combine.
- Return the chicken and bacon to the pot. Add thyme sprigs. Bring to a simmer, then cover and cook for 1.5-2 hours until the chicken is tender.
- Serve hot with crusty bread or over mashed potatoes.
