Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 cup buffalo sauce
- 1/2 cup breadcrumbs
- 2 tablespoons flaxseed meal
- 6 tablespoons water
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1 cup vegan ranch dressing
Instructions
- In a medium saucepan, bring the water to a boil. Add quinoa, cover, and reduce heat. Simmer for 15 minutes or until water is absorbed. Fluff with a fork and let it cool.
- In a small bowl, mix the flaxseed meal with 6 tablespoons of water to create a flax egg. Set aside to thicken for about 5 minutes.
- In a large mixing bowl, combine cooked quinoa, buffalo sauce, breadcrumbs, chopped onion, minced garlic, parsley, and cilantro.
- Add the thickened flax egg to the quinoa mixture and mix until well combined.
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Using your hands, form the mixture into small bite-sized balls and place them on the prepared baking sheet.
- Bake for 25 minutes, turning the bites halfway through, until they are golden brown and crispy.
- Serve warm with the vegan ranch dressing on the side for dipping.
