Ingredients
- 2 lbs beef chuck roast, trimmed and cut into chunks
- 1/2 cup BBQ sauce
- 1 can beer
- 1 tbsp vegetable oil
- 1 tbsp brown sugar
- 1 tbsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- salt
- black pepper
- 8 small flour tortillas, warmed
Instructions
- Preheat oven to 325°F (160°C).
- In a large Dutch oven, heat vegetable oil over medium-high heat.
- Season beef chunks evenly with chili powder, garlic powder, onion powder, salt, and black pepper.
- Sear beef chunks in the Dutch oven until browned on all sides, then remove them from the pot and set aside.
- Add beer, BBQ sauce, and brown sugar to the pot, scraping up any browned bits from the bottom to deglaze.
- Return the seared beef to the pot, ensuring it is well-coated with the sauce, and bring to a gentle simmer.
- Cover the pot and transfer it to the preheated oven. Cook for approximately 2 hours until the beef is tender and easily shredded.
- Carefully remove the pot from the oven. Using two forks, shred the beef directly in the pot, mixing it well with the sauce.
- Warm the flour tortillas and fill them with the shredded BBQ beef mixture before serving.
