Ingredients

  • 2 cups basmati rice
  • 1 lb chicken, cut into pieces
  • 1 cup yogurt
  • 2 tbsp ginger garlic paste
  • 1 tbsp garam masala

Instructions

  1. Rinse the basmati rice until the water runs clear. Soak it in water for 30 minutes.
  2. In a bowl, marinate the chicken with yogurt, ginger garlic paste, and garam masala. Let it sit for 1 hour in the refrigerator.
  3. Bring a large pot of salted water to a boil. Add the soaked rice and parboil until it’s 70% cooked. Drain and set aside.
  4. In a separate pot, place the marinated chicken at the bottom, then add a layer of parboiled rice on top. Repeat the layers until all ingredients are used up.
  5. Cover the pot with a tight-fitting lid, then cook on low heat for 30-40 minutes until the rice and chicken are fully cooked.
  6. Gently mix the biryani before serving. Accompany with raita and salad.
