Ingredients

  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tsp chili powder

Instructions

  1. Combine chicken, yogurt, garam masala, ginger, and garlic in a bowl. Mix well and let chicken marinate for 1 hour in the refrigerator.
  2. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  3. Heat oil and ghee in a large pot over medium heat. Add the sliced onions and cook until caramelized, about 10-15 minutes.
  4. Remove onions from the pot and set aside. Add marinated chicken to the pot and cook until browned on all sides, about 10 minutes. Remove chicken from the pot.
  5. Layer half of the soaked rice evenly in the pot. Place the browned chicken over the rice. Add the caramelized onions on top of the chicken. Layer the remaining rice over the onions.
  6. Cover the pot with a tight-fitting lid and cook on low heat for 30 minutes, until the rice is tender and cooked through.
  7. Gently fluff the biryani with a fork and serve it hot, accompanied by raita and salad.
