Ingredients
- 1 1/2 cup pistachios, shelled and chopped
- 1 cup dates, pitted and chopped
- 1/2 cup oats
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
Instructions
- Preheat the oven to 350°F (180°C) and line a 9×9 inch baking dish with parchment paper.
- Blend the pistachios in a food processor until they are finely ground. Add the oats, melted coconut oil, maple syrup, vanilla extract, and cinnamon to the processor. Pulse until the mixture is well combined and sticks together when pressed.
- Firmly press half of the pistachio mixture into the bottom of the prepared baking dish, creating an even layer.
- Without washing the food processor, add the chopped dates and process until they form a smooth paste. Spread this date paste evenly over the prepared crust.
- Sprinkle the remaining pistachio mixture over the date layer, lightly pressing to ensure it sticks.
- Bake in the preheated oven for 25 minutes or until the top is lightly golden. Remove from the oven and allow to cool completely in the pan.
- Once cooled, lift the bars out of the pan using the edges of the parchment paper and transfer to a cutting board. Cut into 12 equal bars.
