Cinnamon Rolls with Cashew Frosting

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet instant yeast
  • 1/2 cup warm water
  • 1/4 cup plant-based milk
  • 1/4 cup vegan butter, melted
  • 1 tsp salt
  • 1/2 cup brown sugar
  • 2 Tbsp ground cinnamon
  • 1/2 cup cashews, soaked and blended
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Combine flour and sugar in a large bowl.
  2. Mix yeast with warm water in a separate bowl and allow to activate for 5 minutes.
  3. Add the activated yeast mixture, milk, and melted butter to the flour mixture and stir until a dough forms.
  4. Knead the dough on a lightly floured surface for 5 to 7 minutes. Allow to rise in a warm place until doubled in size, about 1 hour.
  5. Roll out the dough, spread evenly with vegan butter, sprinkle with brown sugar and cinnamon.
  6. Roll the dough tightly from one end to the other and slice into 12 even rolls. Arrange the rolls in a greased baking dish.
  7. Allow the rolls to rise in a warm place for an additional 30 minutes.
  8. Bake in a preheated oven at 375°F (190°C) for 25 minutes.
  9. While the rolls bake, prepare the frosting by blending the soaked cashews with maple syrup and vanilla extract until smooth.
  10. Once the rolls are baked, let them cool slightly before topping with cashew frosting.
