Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup buffalo sauce
  • 1/2 cup breadcrumbs
  • 2 tablespoons flaxseed meal
  • 6 tablespoons water
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1 cup vegan ranch dressing

Instructions

  1. In a medium saucepan, bring the water to a boil. Add quinoa, cover, and reduce heat. Simmer for 15 minutes or until water is absorbed. Fluff with a fork and let it cool.
  2. In a small bowl, mix the flaxseed meal with 6 tablespoons of water to create a flax egg. Set aside to thicken for about 5 minutes.
  3. In a large mixing bowl, combine cooked quinoa, buffalo sauce, breadcrumbs, chopped onion, minced garlic, parsley, and cilantro.
  4. Add the thickened flax egg to the quinoa mixture and mix until well combined.
  5. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  6. Using your hands, form the mixture into small bite-sized balls and place them on the prepared baking sheet.
  7. Bake for 25 minutes, turning the bites halfway through, until they are golden brown and crispy.
  8. Serve warm with the vegan ranch dressing on the side for dipping.
