  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large bowl, combine the chicken thighs, olive oil, cumin, coriander, paprika, cayenne, and garlic. Mix well to coat the chicken evenly with the spices.
  2. Cover the bowl with plastic wrap and refrigerate for at least 1 hour or up to overnight to allow the flavors to develop.
  3. Preheat the oven to 375°F (190°C).
  4. Transfer the marinated chicken to a baking dish and pour the chicken broth around the pieces.
  5. Cover the dish with foil and bake in the preheated oven for 45 minutes to ensure the chicken remains moist.
  6. Remove the foil, scatter the preserved lemons over the chicken, and return to the oven for an additional 15 minutes until the chicken is tender and fully cooked.
  7. Serve the chicken hot, spooning the sauce from the baking dish over the top, and garnish with chopped parsley and cilantro.
