Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1/2 cup shredded coconut
  • 2 Tbsp vegetable oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 2 Tbsp Xacuti spice blend
  • 1/2 tsp turmeric powder
  • 1 cup water
  • salt and pepper

Instructions

  1. Toast the shredded coconut in a dry skillet over medium heat until golden brown. Set aside.
  2. In the same skillet, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger, and saute for 5 minutes until onions are translucent.
  3. Stir in the Xacuti spice blend and turmeric powder, cooking for an additional minute until the mixture is fragrant.
  4. Add the chicken thighs to the skillet and cook until browned on all sides, about 5 minutes.
  5. Pour in the water, then add salt and pepper to taste. Cover the skillet, reduce heat to low, and simmer for 30 minutes or until the chicken is cooked through and tender.
  6. Stir in the toasted coconut and cook for an additional 5 minutes to blend flavors.
  7. Serve with steamed rice or crusty bread.
