Ingredients

  • 200 g almond flour
  • 200 g powdered sugar

  • 150 ml heavy cream

Instructions

  1. Preheat the oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. In a food processor, pulse the almond flour and powdered sugar until fine. Sift the mixture into a large bowl, discarding any large pieces.
  3. In a separate bowl, beat the egg whites until foamy. Add the cream of tartar and continue beating until soft peaks form.
  4. Gradually add the granulated sugar to the egg whites, beating until stiff and glossy peaks form.
  5. Gently fold half of the meringue into the almond flour mixture until combined. Repeat with the remaining meringue, ensuring a smooth batter.

  10. Stir the chocolate and cream mixture until smooth. Allow it to cool until it thickens enough to pipe or spread.
  11. Pair macaron shells of similar size. Pipe or spread the chocolate ganache on one shell and sandwich with another.
  12. Refrigerate the filled macarons for 24 hours before serving to enhance the flavor and texture.
