Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 4 oz semisweet chocolate

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water and unsalted butter. Bring to a boil, then add all-purpose flour and stir until the mixture forms a ball.
  3. Transfer the dough to a mixing bowl and let it cool slightly. Beat in large eggs one at a time until smooth.
  4. Pipe or spoon the dough onto the prepared baking sheet in elongated shapes. Bake for 20-25 minutes until golden and puffed. Let cool.
  5. In another saucepan, heat milk until steaming. In a bowl, whisk together sugar, cornstarch, and salt. Gradually whisk into the hot milk.
  6. Cook the mixture until thickened, then remove from heat and stir in vanilla extract. Let cool slightly.
  7. Cut the baked pastries in half lengthwise. Fill with the custard mixture.
  8. Melt semisweet chocolate in a bowl over simmering water. Dip the top of each eclair into the chocolate to coat. Allow the chocolate to set before serving.
