- 6 oz semisweet chocolate, chopped
- 1/4 cup unsalted butter
- 3 Tbsp all-purpose flour
- 1/4 tsp salt
- 1 cup milk
- 4 large eggs, separated
- 1/2 cup granulated sugar
Instructions
- Preheat the oven to 375°F (190°C).
- Butter a 6-cup soufflé dish and sprinkle with sugar, tapping out the excess.
- Melt the chopped semisweet chocolate and unsalted butter in a double boiler over simmering water. Stir until smooth and remove from heat.
- Whisk in the all-purpose flour and salt until smooth. Gradually whisk in the milk and cook over medium heat, stirring constantly, until thickened.
- Remove from heat and whisk in the egg yolks one at a time. Transfer to a large bowl and let cool slightly.
- In a separate bowl, beat the egg whites until foamy. Gradually add the granulated sugar and beat until stiff peaks form.
- Fold 1/4 of the egg whites into the chocolate mixture to lighten it. Gently fold in the remaining egg whites until no streaks remain.
- Pour the mixture into the prepared soufflé dish and smooth the top. Run your thumb around the inside edge of the dish to create a rim.
