Ingredients

  • 1 box puff pastry sheets
  • 2 cups milk
  • 4 Tbsp cornstarch
  • 1/2 cup sugar
  • 4 large egg yolks

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry sheets and cut them into squares. Place the squares on the prepared baking sheet.
  3. Bake the pastry squares for 15-20 minutes until puffed and golden brown.
  4. While the pastries are baking, heat the milk in a saucepan over medium heat until steaming but not boiling.
  5. In a separate bowl, whisk together the cornstarch, sugar, egg yolks, and vanilla extract until smooth.
  6. Slowly pour the steaming milk into the egg mixture, whisking constantly to prevent the eggs from scrambling.
  7. Transfer the mixture back into the saucepan and cook over low heat, stirring continuously, until the custard thickens.
  8. Remove the custard from the heat and let it cool to room temperature, stirring occasionally to prevent a skin from forming.
  9. Once the pastry squares are cool enough to handle, gently open them and fill each with a spoonful of the custard.
  10. Serve the pastry puffs warm or at room temperature.
