Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a bowl, mix gluten-free oats, flour, cinnamon, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract into the butter and sugar mixture.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the raisins until evenly distributed in the dough.
  7. Scoop tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart.
