Packed with energy, these hazelnut espresso protein bars combine the nutty richness of hazelnuts with a caffeine kick.

Ingredients

  • 1 cup hazelnuts
  • 1/2 cup rolled oats
  • 1/4 cup espresso powder
  • 2 tablespoons honey
  • 1/4 cup protein powder, vanilla-flavored
  • 1/4 cup dark chocolate chips
  • 1/4 teaspoon sea salt

Instructions

  1. Preheat the oven to 350°F (175°C) and spread the hazelnuts on a baking sheet.
  2. Toast hazelnuts for 8-10 minutes until lightly browned and fragrant. Allow to cool, then chop finely.
  3. In a large mixing bowl, combine the chopped hazelnuts, rolled oats, espresso powder, honey, protein powder, dark chocolate chips, and sea salt.
  4. Mix until ingredients are well combined and the mixture is evenly blended.
  5. Line an 8" x 8" baking pan with parchment paper and press the mixture firmly into the pan, spreading evenly.
  6. Refrigerate the pan for at least 1 hour to set the bars.
  7. Once set, remove from the pan and cut into 8 bars.
