Kheer is a classic Indian rice pudding made by simmering rice in milk, then sweetened with sugar and enhanced with cardamom and saffron. This dessert offers a rich and creamy texture, complemented by a delightful crunch from mixed nuts. The saffron strands give it a striking golden hue, making it as visually appealing as it is flavorful. Typically served cold, kheer makes for a refreshing and comforting end to a meal, whether on special occasions or as an everyday treat.
Ingredients
- 1/2 cup basmati rice
- 4 cups whole milk
- 1/3 cup sugar
- 1/4 cup mixed nuts, chopped
- 1/4 tsp cardamom powder
- a pinch of saffron strands
Instructions
- Rinse the basmati rice thoroughly and soak it in water for 2 hours. Drain the water afterward.
- In a heavy-bottomed pan, bring the whole milk to a boil. Add the drained rice and reduce the heat to a simmer.
- Stir the mixture occasionally to prevent sticking to the pan. Cook until the rice becomes tender, and the milk thickens to a creamy consistency.
- Add sugar, chopped mixed nuts, cardamom powder, and a pinch of saffron strands. Stir well and continue to cook for an additional 5-10 minutes.
- Remove the pan from heat and allow the kheer to cool. It will continue to thicken as it cools down.
- Serve the kheer chilled, garnished with extra chopped nuts and a sprinkle of saffron strands.
