Ingredients

  • 1/2 cup basmati rice
  • 4 cups whole milk
  • 1/3 cup sugar

  • a pinch of saffron strands

Instructions

  1. Rinse the basmati rice thoroughly and soak it in water for 2 hours. Drain the water afterward.
  2. In a heavy-bottomed pan, bring the whole milk to a boil. Add the drained rice and reduce the heat to a simmer.
  3. Stir the mixture occasionally to prevent sticking to the pan. Cook until the rice becomes tender, and the milk thickens to a creamy consistency.
  4. Add sugar, chopped mixed nuts, cardamom powder, and a pinch of saffron strands. Stir well and continue to cook for an additional 5-10 minutes.
  5. Remove the pan from heat and allow the kheer to cool. It will continue to thicken as it cools down.
  6. Serve the kheer chilled, garnished with extra chopped nuts and a sprinkle of saffron strands.
