Soft, buttery brioche dough infused with zesty lemon and studded with crunchy poppy seeds creates a delightful contrast of textures. Enjoyed on its own or toasted with butter, this brioche brightens your day with its citrus aroma and rich flavor.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tbsp instant yeast
  • 1/2 tsp salt
  • 1/2 cup warm milk
  • 1/4 cup butter, melted
  • 2 tbsp lemon zest
  • 2 tbsp poppy seeds
  • 2 large eggs

Instructions

  1. In a large bowl, combine the all-purpose flour, sugar, instant yeast, and salt.
  2. Add the warm milk, melted butter, lemon zest, poppy seeds, and eggs. Mix until a dough forms.
  3. Knead the dough on a lightly floured surface for 10-15 minutes until it is smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours until doubled in size.
  5. Punch down the dough to remove excess air and shape it into a loaf. Place in a greased loaf pan, cover it with a damp cloth, and let it rise again for another 30-45 minutes until it has expanded.
  6. Preheat the oven to 350°F (180°C).
  7. Bake the brioche in the preheated oven for 30-35 minutes until it is golden brown.
  8. Remove the brioche from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing.
