Tender chicken cutlets are simmered in a creamy sun-dried tomato sauce, creating a rich and flavorful dish.

Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup sun-dried tomatoes, julienned
  • 1 teaspoon dried Italian herbs
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup fresh basil, chopped

Instructions

  1. Season both sides of the chicken breasts with salt and black pepper.
  2. In a 9-inch skillet, heat olive oil over medium-high heat.
  3. Add the chicken breasts and cook for 5-6 minutes on each side until browned. Remove and set aside.
  4. In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  5. Pour in the chicken broth and bring to a simmer, scraping up any brown bits from the bottom of the skillet.
  6. Lower the heat and stir in the heavy cream, sun-dried tomatoes, and Italian herbs.
  7. Return the chicken to the skillet, spooning some sauce over the top.
  8. Cover and simmer for 10-12 minutes until the chicken is cooked through.
  9. Stir in the Parmesan cheese, allowing it to melt into the sauce.
  10. Garnish with fresh basil before serving.
