Ingredients
- 1 1/2 pounds boneless skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup sun-dried tomatoes, julienned
- 1 teaspoon dried Italian herbs
- 1/2 cup Parmesan cheese, grated
- 1/4 cup fresh basil, chopped
Instructions
- Season both sides of the chicken breasts with salt and black pepper.
- In a 9-inch skillet, heat olive oil over medium-high heat.
- Add the chicken breasts and cook for 5-6 minutes on each side until browned. Remove and set aside.
- In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
- Pour in the chicken broth and bring to a simmer, scraping up any brown bits from the bottom of the skillet.
- Lower the heat and stir in the heavy cream, sun-dried tomatoes, and Italian herbs.
- Return the chicken to the skillet, spooning some sauce over the top.
- Cover and simmer for 10-12 minutes until the chicken is cooked through.
- Stir in the Parmesan cheese, allowing it to melt into the sauce.
- Garnish with fresh basil before serving.
