  • 4 slices stale bread, torn into pieces
  • 1/2 cup chorizo, diced

  • 4 large eggs
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup shredded cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat 2 tablespoons of oil in a large skillet over medium heat.
  2. Add the diced chorizo and cook until crispy, then remove from the skillet and set aside.
  3. In the same skillet, add the diced bell pepper and onion, and sauté for 4-5 minutes until softened.
  4. Add the torn bread to the skillet, cooking for 5 minutes until crispy, stirring occasionally.
  5. Move the bread to one side of the skillet and crack the eggs into the cleared space.
  6. Scramble the eggs gently for 3-4 minutes until fully cooked, then mix them with the crispy bread.
  7. Add the cherry tomatoes, cooked chorizo, and shredded cheese to the skillet, stirring until the cheese melts and everything is heated through.
  8. Garnish with fresh cilantro before serving hot.
