Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg, beaten
  • 1/4 cup parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes

Instructions

  1. In a bowl, combine the ground beef, breadcrumbs, milk, egg, parsley, salt, and pepper. Mix until well combined.
  2. Shape the mixture into meatballs, about 1 inch in diameter.
  3. In a skillet, heat the olive oil over medium heat. Add the meatballs and cook until browned on all sides.
  4. Remove the meatballs from the skillet and set aside.
  5. In the same skillet, add the onion and garlic. Cook for 3 to 4 minutes until softened.
  6. Add the diced tomatoes and bring to a simmer.
  7. Return the meatballs to the skillet and simmer for 20 to 30 minutes, until cooked through.
  8. Serve the Albóndigas hot over rice or with crusty bread.
