- 2 lb new potatoes, small
- 1/4 cup sea salt
- 4 whole garlic, peeled
- 1/4 cup extra virgin olive oil

Instructions
- In a large pot, bring water to a boil and add the sea salt, stirring to dissolve.
- Add the small new potatoes to the pot. Cook until they are tender, approximately 20-25 minutes.
- While the potatoes cook, prepare the mojo sauce by combining the peeled garlic, extra virgin olive oil, red wine vinegar, and paprika in a blender. Blend until smooth and set aside.
- Once the potatoes are cooked, drain them and return them to the pot. Cook over low heat, shaking the pot occasionally until all remaining water evaporates and a fine salt crust forms on the potatoes.
- Transfer the potatoes to a serving dish. Serve them hot alongside the mojo sauce for dipping.
