Ingredients

  • 2 lb new potatoes, small
  • 1/4 cup sea salt
  • 4 whole garlic, peeled

Instructions

  1. In a large pot, bring water to a boil and add the sea salt, stirring to dissolve.
  2. Add the small new potatoes to the pot. Cook until they are tender, approximately 20-25 minutes.

  4. Once the potatoes are cooked, drain them and return them to the pot. Cook over low heat, shaking the pot occasionally until all remaining water evaporates and a fine salt crust forms on the potatoes.
  5. Transfer the potatoes to a serving dish. Serve them hot alongside the mojo sauce for dipping.
