Pistachio Rosewater Macarons are exquisite French pastries that offer a delightful blend of nutty pistachio and floral rosewater flavors. These refined confections feature a crisp meringue shell and a chewy interior, filled with a rich pistachio buttercream. Suitable for special occasions or a luxurious treat, these macarons will delight dessert enthusiasts. Achieving success with macarons requires accuracy in measurement and technique, ensuring the perfect texture and taste.

Ingredients

  • 2 cups ground pistachios
  • 1 1/2 cups powdered sugar
  • 1/2 cup almond flour
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 tsp cream of tartar
  • 1/4 tsp salt
  • 1/2 tsp rosewater
  • 4 tbsp unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1/2 cup ground pistachios
  • 1/2 tsp rosewater

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a food processor, pulse the ground pistachios, powdered sugar, and almond flour until finely ground. Sift the mixture to ensure a smooth texture.
  3. In a large bowl, whip the egg whites with granulated sugar, cream of tartar, and salt until stiff peaks form.
  4. Gently fold the pistachio mixture into the egg whites in batches until the batter is smooth and shiny. Be careful not to overmix.
  5. Transfer the batter to a piping bag fitted with a round tip and pipe small rounds onto the prepared baking sheets, spacing them about 1 inch apart.
  6. Tap the baking sheets on the counter to release air bubbles, then let the macarons sit at room temperature for 30 minutes until they form a skin on their surface.
  7. Bake the macarons for 15 minutes, then allow them to cool completely on the baking sheets before removing.
  8. To make the filling, beat the butter, powdered sugar, ground pistachios, and rosewater in a bowl until smooth and creamy.
  9. Pipe or spread the filling onto the flat side of half of the macarons and sandwich with the remaining halves, pressing gently to spread the filling evenly.
  10. Store the assembled macarons in an airtight container in the fridge for up to 3 days to allow the flavors to meld.
