Ingredients

  • 2 lbs beef chuck roast, cut into chunks

  • 4 cups water

  • 2 whole onions, peeled and quartered

  • 4 whole potatoes, peeled and quartered
  • 1 Tbsp salt
  • 1 tsp peppercorns
  • 2 whole bay leaves

Instructions

  1. Combine beef, broth, water, salt, and peppercorns in a large pot.
  2. Bring to a boil, then reduce heat and let simmer for 1 hour at low heat.
  3. Add carrots, onions, celery, and bay leaves, keeping the pot at a simmer for an additional 2 hours.
  4. Introduce potatoes and allow the mixture to simmer until beef and vegetables are tender, approximately 1 hour.
  5. Remove bay leaves before serving.
