Ingredients
- 2 pounds pork shoulder
- 1 cup barbecue sauce
- 1 tablespoon smoked paprika
- 1 onion, sliced
- 12 slider buns
- 1 ripe mango, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 jalapeño, seeded and minced
Instructions
- Preheat your oven to 325°F (163°C).
- Rub the pork shoulder with smoked paprika and place it in a roasting pan.
- Add the sliced onion to the pan and pour the barbecue sauce over the pork.
- Cover the pan with aluminum foil and bake for 4 hours, until the pork is tender and easily shredded.
- While the pork is cooking, prepare the mango salsa by combining the diced mango, red onion, cilantro, lime juice, and minced jalapeño in a bowl. Mix well and set aside.
- Once the pork is done, remove it from the oven and let it rest for 20 minutes.
- Shred the pork using two forks and mix it with the juices in the pan.
- Assemble the sliders by placing a portion of pulled pork on each slider bun and topping with mango salsa.
- Serve immediately.
