Ingredients

  • 2 pounds pork shoulder
  • 1 cup barbecue sauce
  • 1 tablespoon smoked paprika
  • 1 onion, sliced
  • 12 slider buns
  • 1 ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 jalapeño, seeded and minced

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Rub the pork shoulder with smoked paprika and place it in a roasting pan.
  3. Add the sliced onion to the pan and pour the barbecue sauce over the pork.
  4. Cover the pan with aluminum foil and bake for 4 hours, until the pork is tender and easily shredded.
  5. While the pork is cooking, prepare the mango salsa by combining the diced mango, red onion, cilantro, lime juice, and minced jalapeño in a bowl. Mix well and set aside.
  6. Once the pork is done, remove it from the oven and let it rest for 20 minutes.
  7. Shred the pork using two forks and mix it with the juices in the pan.
  8. Assemble the sliders by placing a portion of pulled pork on each slider bun and topping with mango salsa.
  9. Serve immediately.
