Ingredients

  • 1 lb pounds baby beets, scrubbed and trimmed

  • 1 cup cups feta cheese, crumbled
  • 1/4 cup cups Greek yogurt
  • 2 tablespoons tablespoons lemon juice
  • 1/4 cup cups pistachios, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the baby beets in a bowl with olive oil, salt, and pepper until evenly coated.
  3. Spread the beets out in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 40 minutes or until tender, turning halfway through.
  5. While the beets are roasting, combine the feta cheese, Greek yogurt, and lemon juice in a food processor.
  6. Blend until smooth and creamy, adjusting seasoning with salt and pepper as needed.
  7. Once the beets are cooked, allow them to cool slightly, then slice them in half.
  8. Spread the whipped feta mixture on a serving platter and arrange the roasted beets on top.
  9. Sprinkle chopped pistachios over the dish for added crunch and serve immediately.
