Roti Prata

Roti Prata is a beloved South Indian dish that has become popular in Southeast Asia. This flaky and crispy flatbread, enjoyed for breakfast, brunch, or as a snack, is created by stretching and folding the dough multiple times to form layers. The resulting texture is delightful when cooked. Roti Prata is typically served with a savory curry or sweet condensed milk. Though making Roti Prata from scratch can be challenging, practice makes the process manageable and rewarding.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 cup water
  • 2 Tbsp vegetable oil

Instructions

  1. In a mixing bowl, combine the flour and salt.
  2. Gradually add water while mixing until a smooth dough forms. Knead the dough for 5 to 7 minutes.
  3. Divide the dough into small balls and coat each with vegetable oil.
  4. Cover the dough balls with a damp cloth and let them rest for 1 hour.
  5. On an oiled surface, roll out each ball into a thin sheet, then fold the edges inward to form a square, making sure to create layers.
  6. Preheat a skillet over medium heat and add a small amount of vegetable oil.
  7. Cook each Roti Prata for 2 to 3 minutes on each side or until it is golden brown and crispy.
  8. Serve hot with curry or sweetened condensed milk.
