  • 2 whole live crabs
  • 4 large salted duck eggs
  • 1 cup cornstarch
  • 1/2 cup butter
  • 1 tablespoon curry leaves
  • 1 tablespoon chili padi

Instructions

  1. Clean and prepare the crabs by removing the top shell, gills, and claws. Cut the body into pieces.
  2. Separate the salted egg yolks from the whites and mash the yolks in a bowl.
  3. Coat each crab piece in cornstarch, ensuring even coverage.
  4. In a large pot, heat enough vegetable oil to submerge the crab pieces to 350°F (175°C). Fry the crab until golden brown and crispy. Set aside on paper towels to drain excess oil.
  5. In a pan, melt the butter over medium heat and add the curry leaves and chili padi. Stir until fragrant.
  6. Add the mashed salted egg yolks to the butter mixture, stirring until creamy and smooth.
  7. Add the fried crab pieces to the pan, tossing them in the salted egg yolk mixture until evenly coated.
  8. Remove from heat and transfer the crab to a serving dish. Garnish with additional curry leaves if desired.
