  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1 tsp salt
  • 1 cup water
  • 1 tbsp lemon juice
  • 1 tbsp brown sugar
  • 2 tbsp coconut milk
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. Heat the vegetable oil in a large pot over medium heat until shimmering.
  2. Add the onion, garlic, and ginger. Saute for about 3 minutes until fragrant.
  3. Stir in the chili powder, turmeric powder, coriander powder, cumin powder, and salt. Cook, stirring frequently, for 1-2 minutes until the spices are aromatic.
  4. Place the chicken breasts in the pot and add the water. Bring to a boil, then reduce the heat to low. Cover and simmer for 30-40 minutes, or until the chicken is cooked through and tender.
  5. Remove the chicken from the pot and shred it using two forks.
  6. Return the shredded chicken to the pot. Add the lemon juice, brown sugar, and coconut milk. Stir to combine and cook for an additional 5 minutes to blend the flavors.
  7. Garnish with chopped cilantro before serving.
