Ingredients

  • 1 block firm tofu, drained and cubed
  • 1/2 cup cornstarch
  • 1/4 cup vegetable oil
  • 1 whole green bell pepper, chopped
  • 1 whole red bell pepper, chopped
  • 1 can pineapple chunks, drained
  • 1/2 cup rice vinegar
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 1 tbsp cornstarch mixed with 1/4 cup water to form a slurry

Instructions

  1. Press tofu under a heavy object for at least 30 minutes to extract excess moisture. After pressing, cut tofu into cubes.
  2. Toss tofu cubes in cornstarch to coat evenly, shaking off any excess.
  3. Heat vegetable oil in a skillet over medium heat. Add tofu and cook until all sides are golden and crispy. Remove tofu and set aside on a paper towel-lined plate.
  4. Using the same skillet, sauté green and red bell peppers until just tender.
  5. Incorporate pineapple chunks, rice vinegar, soy sauce, ketchup, brown sugar, ginger, and garlic into the skillet, stirring to combine.
  6. Prepare a slurry by whisking together cornstarch and water until smooth. Pour into the skillet, stirring constantly, until the sauce thickens.
  7. Add the crispy tofu back to the skillet, gently tossing to coat with the sauce.
  8. Serve the prepared sweet and sour tofu over a bed of rice or noodles.
