- 4 whole quails
- 1 cup mixed wild mushrooms, sliced

- 1/2 cup parmesan cheese, grated
- 2 tbsp olive oil, divided

- Preheat the grill to medium-high heat, about 375°F (190°C).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced shallot and garlic, and sauté for about 2-3 minutes until fragrant.
