Ingredients
- 4 chicken thighs, skin-on
- 1 cup apricot preserves
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon ground black pepper
- 1 tablespoon olive oil
- 2 sprigs fresh thyme
Instructions
- Preheat oven to 375°F (190°C).
- In a small bowl, mix together apricot preserves, soy sauce, rice vinegar, minced garlic, grated ginger, and ground black pepper.
- Heat olive oil in an oven-safe 9" skillet over medium-high heat.
- Add chicken thighs, skin side down, and sear until golden brown, about 5 minutes.
- Flip the chicken thighs and pour the apricot glaze evenly over them.
- Add fresh thyme sprigs to the skillet.
- Transfer the skillet to preheated oven and bake for 25-30 minutes, or until chicken is cooked through and glaze is sticky.
