Ingredients

  • 4 chicken thighs, skin-on
  • 1 cup apricot preserves
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 2 sprigs fresh thyme

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix together apricot preserves, soy sauce, rice vinegar, minced garlic, grated ginger, and ground black pepper.
  3. Heat olive oil in an oven-safe 9" skillet over medium-high heat.
  4. Add chicken thighs, skin side down, and sear until golden brown, about 5 minutes.
  5. Flip the chicken thighs and pour the apricot glaze evenly over them.
  6. Add fresh thyme sprigs to the skillet.
  7. Transfer the skillet to preheated oven and bake for 25-30 minutes, or until chicken is cooked through and glaze is sticky.
  8. Remove from oven and let rest for 5 minutes before serving. Enjoy!
