Ingredients
- 2 pounds beef chuck, cubed
- 2 cans coconut milk
- 6 cloves garlic, minced
- 2 inches ginger, grated
- 4 stalks lemongrass, bruised
- 5 pieces kaffir lime leaves
- 3 tablespoons tamarind paste
- 3 tablespoons brown sugar
- 1 cup water
Instructions
- Heat 2 tablespoons of oil in a large pot over medium heat.
- Add the garlic, ginger, and lemongrass, and sauté for 2 to 3 minutes until fragrant.
- Add the cubed beef and brown on all sides for about 5 to 7 minutes.
- Stir in the coconut milk, water, kaffir lime leaves, tamarind paste, and brown sugar.
- Bring the mixture to a simmer, then reduce the heat to low and cook uncovered for about 3 hours, stirring occasionally, until the sauce thickens and the beef is tender.
- Remove the lemongrass and kaffir lime leaves before serving.
