Black Bean Spare Ribs (豆豉排骨)

Black Bean Spare Ribs offer a savory taste, combining tender pork ribs with the umami-rich flavor of fermented black beans. This traditional Chinese recipe is straightforward and great for dinners or special occasions. Marinating the ribs in a mixture of black beans, garlic, ginger, and soy sauce intensifies the flavors in the meat. Slow cooking the ribs until tender ensures a delicious final result. Pair these ribs with steamed rice and vegetables for a complete meal.

Ingredients

  • 2 lbs pork spare ribs
  • 1/4 cup fermented black beans, rinsed and mashed
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp cornstarch
  • 1/2 cup water

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a bowl, mix together the mashed black beans, garlic, ginger, soy sauce, and sugar until well combined.
  3. Add the spare ribs to the bowl and coat them with the marinade. Let them marinate for at least 30 minutes, allowing the flavors to penetrate the meat.
  4. In a separate bowl, mix the cornstarch and water to make a smooth slurry.
  5. Place the marinated ribs in a baking dish and pour the slurry over them.
  6. Cover the dish with foil and bake for 1.5 hours to tenderize the meat.
  7. Remove the foil and bake for an additional 30 minutes, basting the ribs with the sauce every 10 minutes to caramelize the surface.
  8. Once the ribs are tender and caramelized, remove them from the oven and let them rest for 5 minutes before serving.
