Instructions
- Preheat oven to 350°F (175°C).

- Add chicken thighs, skin side down, and sear until golden brown, about 4 minutes per side. Remove chicken and set aside.
- Add sliced onions, garlic, and ginger to the pot, and sauté until fragrant, about 2 minutes.
- Pour in soy sauce, honey, and water, stirring to combine.
- Return chicken to the pot, cover, and transfer to the oven.
- Bake for 45 minutes, then uncover and bake for an additional 15 minutes to thicken the sauce.
