  • 4 large flour tortillas
  • 2 Tbsp olive oil

Instructions

  1. In a large bowl, combine the cooked chicken, cheddar cheese, tomatoes, cilantro, and red onion.
  2. Place a tortilla on a flat surface. Spoon some of the chicken mixture onto one half of the tortilla. Fold the other half over to create a half-moon shape.
  3. Heat olive oil in a skillet over medium heat. Once the oil is hot, place the folded tortilla in the skillet.
  4. Cook each quesadilla for 2 to 3 minutes on each side until golden brown and crispy.
  5. Transfer the cooked quesadillas to a cutting board and slice into wedges.
  6. Repeat the process with the remaining ingredients until all quesadillas are cooked.
  7. Serve the sliced quesadillas hot.
