Ingredients

  • 1 pound boneless, skinless chicken breasts, sliced into strips
  • 2 Tbsp olive oil
  • 1 medium red bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz fettuccine pasta
  • 2 Tbsp chipotle peppers in adobo sauce, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1 whole lime, juiced and zested
  • 1 whole avocado, sliced
  • fresh cilantro, chopped

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  2. Add the chicken strips and cook until browned on all sides, about 5-6 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil.
  4. Add the bell peppers, onion, and garlic. Cook until vegetables are tender, about 5 minutes.
  5. Stir in the chipotle peppers, smoked paprika, cumin, lime juice, and zest.
  6. Pour in the chicken broth and heavy cream. Bring to a simmer.
  7. Add the fettuccine pasta, ensuring it’s submerged in the liquid. Cook for 10-12 minutes or until the pasta is al dente, stirring occasionally.
  8. Return the chicken to the skillet and stir to combine. Cook for an additional 2-3 minutes until heated through.
  9. Taste and adjust with salt and pepper as needed.
  10. Serve the pasta in bowls, topped with fresh avocado slices and a sprinkle of chopped cilantro.
